Raw instant potato powder (dehydrated potato flakes or granules) is the dry, unrecombined product before water or milk is added. In its dry form it is very energy-dense (~340 kcal/100g) as a concentrated source of carbohydrate, with minimal fat. It retains starch and some minerals from potato but loses most of its vitamin C during dehydration. It is used as a convenience food base or as a thickening agent in soups and gravies.
Store instant potato powder in a cool, dry place in an airtight container; moisture causes clumping and spoilage. As a recipe thickener, whisk a tablespoon of the dry powder into simmering soup or gravy at the end of cooking.
