Raw pecan halves are a rich source of monounsaturated and polyunsaturated fat, manganese, copper, thiamin, and zinc. They contain more antioxidant polyphenols than almost any other tree nut, including ellagic acid and proanthocyanidins. Gamma-tocopherol (a form of vitamin E) is particularly high in pecans, linked in research to anti-inflammatory effects.
Store in the fridge or freezer; pecans are high in polyunsaturated fat and go rancid quickly at room temperature. Toast at 160°C for 8-10 minutes for a deeper, butterscotch-like flavour.
