Unenriched unbleached all-purpose flour has not had B vitamins or iron added back after milling, nor has it been bleached. It retains more natural wheat flavour and a small amount of vitamin E, but provides less iron, folate, thiamin, niacin, and riboflavin than enriched flour. Used where a clean-label, minimal-additive ingredient is preferred.
Suitable for rustic breads and pastries; if replacing enriched flour in a recipe, consider overall nutritional adequacy of the diet, particularly folate and iron intake.
