Sorghum flour is ground from whole sorghum grain — the world's fifth-largest cereal crop and a staple across Africa and Asia. It is naturally gluten-free, high in protein (around 10g/100g), and provides iron, magnesium, phosphorus, B vitamins, and a range of polyphenols with antioxidant activity. Its mild flavour makes it one of the most versatile gluten-free baking flours.
Substitutes well for up to 50% of wheat flour; combine with tapioca starch and a binder for gluten-free baking. Sorghum flour keeps well at room temperature due to its stable bran oils.
