Dried rosemary retains the robust, piney, resinous flavour of fresh rosemary remarkably well, making it one of the better-performing dried herbs. Per tablespoon it provides excellent vitamin K, useful iron, calcium, and manganese, plus rosmarinic acid and carnosic acid — antioxidants that are stable to heat and preserved through drying.
Dried rosemary needles are hard and can be unpleasant to eat whole; crumble or chop finely before adding, or infuse in oil and remove. Add early in long-cooked dishes.
