Sesame oil comes in two forms: light (pressed from raw seeds, neutral flavour, higher smoke point) and dark/toasted (pressed from toasted seeds, intensely flavoured, low smoke point). Both provide a balanced mix of monounsaturated and polyunsaturated fat, vitamin E, and the unique sesame lignans sesamin and sesamolin, which act as antioxidants and have modest cholesterol-modulating properties.
Dark toasted sesame oil is a finishing oil — add a few drops at the end of cooking for its powerful aroma. It burns and turns bitter at high temperatures. Light sesame oil can be used for stir-frying. Both are used in small quantities.
