Ground mace is made from the dried lacy red aril that surrounds the nutmeg seed. It has a similar warm, spiced flavour to nutmeg but more delicate and with a slightly more floral, peppery note. Per teaspoon it provides trace manganese and iron. It is used in baking, white sauces, sausages, and in blends where nutmeg might be too assertive.
Use in the same applications as nutmeg but where a more subtle flavour is wanted; start with half a teaspoon per recipe. Like nutmeg, it is best freshly ground from whole dried mace blades.
