Fresh coriander (cilantro) leaves are a globally popular herb providing vitamin K, beta-carotene, vitamin C, and folate. The characteristic aroma that divides opinion comes from (E)-2-alkenals — the same aldehydes found in certain insects, which explains the soapy perception in those with a particular taste receptor variant. All parts of the plant are edible.
Add fresh coriander at the very end of cooking; its aromatics are heat-volatile. The roots and stems are more flavour-intense than the leaves — blitz them into curry pastes and marinades.
