Ground cinnamon is made from the dried inner bark of Cinnamomum species. Its characteristic warmth comes from cinnamaldehyde. It provides manganese in meaningful amounts per teaspoon — often exceeding the daily requirement. Ceylon cinnamon (true cinnamon) contains very little coumarin; Cassia cinnamon (most supermarket cinnamon) contains significantly more coumarin, which at high doses can affect liver function.
Use Ceylon (Sri Lankan) cinnamon if consuming large daily amounts — its coumarin content is much lower than Cassia. A teaspoon per day is well within safe limits for either type in most people.
